In this Salt Water Farm Maine Cooking Class, discuss the fishing industry along the Maine Coast, the availability of fish varieties native to the area, how to select fish at your local fish store, correct filleting and shucking methods and various ways to prepare fish at home. Dishes may include seared hake with warm farro and spring greens with sorrel vinaigrette, rope grown mussels with tomato, saffron, lovage and cream and Pemaquid oysters on the half shell with mignonette.
